Frances is the co-founder of Connecticut’s first natural foods cooking school the Potsanjammer School of Cooking, the author of numerous books and articles on health, nutrition and cooking, a quasi-vegan and long-time core strength instructor at the New Canaan and Darien YMCAs. She is also an active exhibiting artist in Fairfield County.

WHY HORSERADISH? Famous for medicinal uses for centuries, Horseradish is a lesser known cruciferous vegetable (same family as kale, radishes and broccoli) which supplies compounds called glucosinolates which the National Institutes of Health tell us, help fight cancer and other inflammatory conditions… Horseradish possesses powerful antimicrobial and antibacterial properties. As an expectorant, It stimulates mucus secretions in the sinuses and the lungs, helping to treat bronchitis, cough, the common cold, and sinusitis. Compared to conventional antibiotics, horseradish does an equally in good job of clearing up sinusitis and bronchitis as prescribed antibiotics says the American Botanical Council. Green Apron horseradish contains low levels of salt, and is made from fresh ingredients without preservatives.
